Some phrases i have found that will be suitable for Olympic sports:
"It's not winning that counts, but participating." - Monsignor Ethelbert Talbot
"Sports do not build character. They reveal it." - Heywood Hale Brown, Writer
Find this phrase rather meaningful as it is really quite true that you can see determination and attitude of sportsmen when they are participating. Many times in a way, it is the person's attitude to see whether he/she want to continue the sport actually. If they do not want or give up it is hard for them to win. Well unless they are really good. Even talent sometimes need to be polished to go greater heights.
This is one more nice phrase:
"Olympism...exalting and combining in a balanced whole qualities of body, mind and will" - Pierre de Coubertin - Founder of the modern Olympic Movement
